Add Enough Water to Cover Beans By 2 Inches. Bring to Boil, Boil 2 Minutes. Remove from Heat, Cover and Let Stand 1 Hour. Drain and Rinse Beans. Cooking: 1 Pound Black Beans, 2 1/2 Quarts of Water, 2 Teaspoons of Salt, 1/3 Cup Tomato Sauce, 2 Tablespoons Olive Oil, 1/4 Pound of Potatoes, 1/4 Pound of Squash, Seasoning: Small Onion, 1 Green Pepper, 1/2 Tomato, 1 Small Sweet Red Pepper, 3 Coriander Leaves, 1/4 Teaspoon Oregano, and 2 Cloves Pressed Garlic). Suggest: Add 1/3 Pound of Cooked Ham. 1) Soak Black Beans According to Rico Beans Soaking Method. 2) Rinse, Drain and Cook Beans In Enough Water, 6 Inches Above The Beans, Add Salt to Taste. When They Begin to Boil, Cover Beans and Cook At Moderate Heat Until Soft (Approximately 1 1/2 Hour). 3) Drain and Add The Rest of The Ingredients and Cook At Moderate Heat For Approximately 1/2 Hour. 4. Mash Part of The Potatoes and Squash to Thicken Sauce.
